Madeleine Kamman, a French chef, restaurateur and cookbook author, had her own public television series from 1984-1991, the first cooking program produced by Maryland Public Television. For this program, she demonstrates making braised pork, savoie-style; Choucroute (sausage, smoked pork chops, and sauerkraut); and pan-roasted pork tenderloin.
