Madeleine Kamman, a French chef, restaurateur and cookbook author, had her own public television series from 1984-1991, the first cooking program produced by Maryland Public Television. For this program, she demonstrates cooking confit (meat cooked slowly in its own fat) of duck and turkey legs. as well as preparing roast duck, "American style."
